Here’s something I notice every summer: nobody wants a hot lunch.
And honestly? Fair. It’s already hot out. Standing over the stove or reheating last night’s leftovers in the sad communal microwave just doesn’t hit the same way it does in January. When the weather warms up, we naturally start reaching for lighter foods that feel better in our stomach. And while we can easily default to a sandwich this can get old quick and oftentimes people on a GLP-1 will complain that the bread will fill them up in the moment before getting to the protein of the sandwich.
So lately I’ve been giving my clients a workaround: simplify lunch with ready-to-plate ingredients. No cooking. No recipe. Just assembly.
The concept isn't new. I first ran into it in elementary school, in the form of Lunchables. The pre packaged meal my mom refused to buy me growing up (and looking back, she was right). Instead I got a plain peanut butter sandwich on potato bread, sliced apples with a squeeze of lemon so they wouldn't brown (mom knew the hack), and a bag of chips if we had them. When remaking the Adult Lunchable think girl dinner, but make it intentional. Balanced. Actually built to support your goals.
The Adult Lunchable Framework
1/2 plate veggies (or 1/4 veggies + 1/4 fruit)
1/4 plate protein
1/4 plate carb
1 tbsp healthy fat
Every section is doing a job.
Veggies & Fruit get the biggest real estate. They add volume to your plate without piling on the calories, so you feel like you’re eating a full meal (because you are). This is also where a lot of your fiber comes from. Fiber slows digestion and keeps you full longer, and all those different colors are rich in vitamins and minerals. Not to mention, fiber is a prebiotic, which means it feeds the good bacteria in your gut. And your gut is tied to your mood, your immune system, and your hormones. So yeah, hence this is the largest portion on the plate.
Protein is the anchor of the meal. It keeps you full the longest between meals and blunts your blood sugar so you’re not crashing at 3pm.
Carbs round the whole thing out. Pick whole grains and you’ll get even more fiber. And no, carbs are not the enemy. They fuel your brain so you’re not dragging after lunch, and they keep you from being ravenous two hours later. Please enjoy them.
Healthy Fats matter even if weight loss is your goal. One tablespoon is plenty. Fat helps you actually absorb the vitamins from everything else on the plate, supports your hormones, and keeps your blood sugar steady so you’re not chasing a cookie two hours later.

The Tradeoff
The whole “5-minute lunch” thing only works if your ingredients are ready to go. That means you either prep them yourself (wash and chop) or you buy them pre-cut, which costs more. This may seem obvious but it’s important to point out. Nothing comes free. You’ll pay in time, in money, or in not feeling any better with your food choice or body. Pick your tradeoff.
The Payoff
Built with this framework, one adult lunchable easily lands 25+ grams of protein, 5+ grams of fiber, and stays under 400 calories.

What I’m Actually Building Mine With
Here are a few of my favorite products for putting together my lunchable right now:
This idea isn’t new. That’s the point. It’s reliable, it’s easy to repeat, and the mix-and-match keeps you from getting bored. More than anything, it trains the mindset I care about most: abundance > restriction. I see it with my 1:1 clients.
The shift from “I can’t have that” → “what can I add?” gets better long-term results, and it builds real confidence along the way.
If you want a plan built around your body, your goals, and your blood sugar, we can work together one-on-one or in my upcoming first ever GLP-1 Foundations Group Program. To learn more you can visit my website here.
